Butter on the Endive presents “Chef in Residence: a Collaborative Food Project” to be held May 3 through 6, in a private venue located above Le Marché St. Georges Café. Chef in Residence like ‘artist in residence’, is a curated series that provides an opportunity to work with the community, share creative ideas or simply enjoy the company of others in a salon-style environment. Throughout the day, the space will act as a lounge for Le Marché goers, inviting them to come up to the space with coffee and pastries in-hand and meet the Butter on the Endive team while they prepare for dinner service. Also popping-up in the residence will be a collection of three Vancouver-based photographers: David Zilber, Hana Pesut, KIN Chan.
Owen Lightly, chef and proprietor of Butter on the Endive, will collaborate with a featured chef to create an inspired dinner May 3 – 5 and prepare acasual, made-to-orderbrunch on May 6 at this pop-up restaurant. The featured chefs are:Adam Chandler, Jane Cornborough, and Alvaro Musso; each chef bringing their own artistic practice to the table.
Chef in Residence Collaborations:
Thursday May 3 – Chocolatier Adam Chandler of Beta 5 Chocolates and Lightly will offer amulti-perspective approach to cooking – see what happens when a chocolatier and a chef de cuisine join forces.
Friday May 4 – Chef Jane Cornborough (previous Chef de Cuisine of Refuel Restaurant) and Owen willpay homage to their coastal upbringings through seafood and spring flavours.
Saturday May 5 – Chef Alvaro Musso of Market Restaurant and Lightly will prepare a multidisciplinary menu inspired by the cuisine of Peru.
Sunday May 6 – Butter on the Endive will open the doors to their pop-up restaurant, in collaboration with Le Marché St. Georges, for a made-to-order brunch served on a first-come, first-served basis, 11am-3pm. Walk-ins are welcome.

Time: May 3 – 5 dinner, two seatings: 5:30pm & 8:30pm
May 6 walk-in brunch – no reservations required: 11am -3pm
Price: minimum donation of $65 per person includes a 5 course dinner (gratuity additional), minimum donation of $8 per brunch item.

Beverages: alcohol will not be served but guests are encouraged to bring their own. A small selection of non-alcoholic beverages will be available.
